  • Boiled Potatoes: 3-4 medium (mashed) 
  • Cumin Seeds (Jeera): ½ tsp 
  • Green Chilies: 2 (finely chopped) 
  • Black Pepper Powder: ¼ tsp 
  • Fresh Coriander: A handful, chopped 
  • Sendha Namak: To taste 

Step-by-Step Preparation Guide 

 

Step 1: Prepare the “Vrat” Batter 

Drain the water from the soaked Sama rice. Place it in a blender with the curd and ginger-chili paste. Blend until very smooth. Transfer to a bowl, then whisk in the Kuttu flour and Sendha Namak. Gradually add water until you achieve a thin, pourable consistency similar to regular rice dosa batter. Let it rest for 15 minutes. 

Step 2: Make the Savory Potato Filling 

Heat a teaspoon of ghee in a pan. Add cumin seeds and let them crackle. Toss in the green chilies and mashed potatoes. Sprinkle with Sendha Namak and black pepper. Sauté for 3-4 minutes until the potatoes are well-coated and fragrant. Garnish with fresh coriander and set aside. 

Step 3: Spreading the Dosa 

Heat a non-stick tawa over medium heat. Sprinkle a few drops of water to check the heat; if it sizzles and evaporates, the tawa is ready. Wipe it clean. Pour a ladleful of batter in the center and spread it in a circular motion, moving outward to create a thin circle. 

Step 4: Roasting to Perfection 

Drizzle a little ghee around the edges. Cook on medium-low flame until the edges start to lift and the bottom turns a lovely golden brown. Place a portion of the potato filling in the center, fold the dosa, and serve hot! 

Secrets to a Perfect Vrat Kuttu Rice Dosa 

The Temperature Trick: If the tawa is too hot, the batter will stick and won’t spread. Always cool the tawa slightly by sprinkling water before making the next dosa. 

The Fine Grind: Make sure the Sama rice is ground as finely as possible. Any grit will prevent the dosa from being paper-thin.
